
Creamy Tomato Chicken Skillet w/ Artichokes

This is an easy skillet dinner that comes together quickly. It can be paired with pasta, served with crusty bread, or enjoyed atop a slice of focaccia with a thick slice of fresh mozzarella (pop it in the oven to get the mozz nice and melty).
As pictured, I have tried it with skin on chicken, and I don't think with this much hydration, it's the best call, because the skin never gets crispy and no one likes chewy skin :) Proceed as written!
For some extra greens, pair it with a lemony arugula salad.
