Creamy Red Pepper & Spiced Cauliflower Pasta

This time of year, bountiful produce is scarce, so pantry-staples like roasted red peppers can really make a weeknight meal sing. Our muhammara sauce is a staple in our household, and this dish was inspired by that as a base. It’s part pasta ala Vodka, part muhammara, a mix of the familiar and something new.

This is written with our dairy-friendly folks in mind, so the small additions of goat and parm you can take or leave. We like Nutpods original dairy-free creamer (unsweetened) for a sub for heavy cream and you can use that here. Sprinkle parm or goat to finish if you do cheese, or some toasted breadcrumbs or well chopped toasted nuts if you like a little texture and fat or salty crunch on top.
