Winter Minestrone

Lots of chopping but worth it. This winter, our group of friends had a baby boom and I’ve found myself needing to make quite a few meals that are easy to deliver. On the new site, we started a tag for “to deliver to friends” and I am putting meals in there that save well, can be reheated easily, or even frozen. I keep larger glass jars or wash take out containers and save them for easy delivery.

We have a bit of pasta in here, but I have made it with and without it, and the soup is great both ways. It will be bulkier and drier with the pasta, so add a splash of water if you’d like more broth.
