My goal was to make a soup in 30 minutes. You can do this easily with Trader Joe’s shortcuts, namely being the precut container of mirepoix (onions, celery and carrots). I also used TJ’s steamed lentils, though the recipe below reflects whole, dry lentils. Because not everyone is near a Trader Joe’s, or may want to spare the extra packaging, ingredients below are listed as you’d find them at any store.

Six cups of broth will get you a thicker soup, and 8 cups will (obviously) loosen things up and even give you room to add some cooked pasta if you’d like. I prefer to use bone broth when I have it to add even more nutrition to the soup, but it is more expensive. I always have the Better than Bouillon from Costco on hand, which absolutely will do the trick.
