Vodka Pasta Skillet Lasagna

Vodka pasta had a moment a few years ago due to its ease and flavor. I took the same concept and transformed it into a skillet lasagna that doesn’t even require you to cook the noodles. If you aren’t a vodka household, a blanco tequila will work here as long as it isn’t vanilla-y, or you can sub in a very dry white wine. Omnivores? A half-pound of Italian sausage browned with the onions would be great.

Your shortcut here is to use a 24 oz. jar of prepared vodka sauce. I tried the Trader Joe’s one with success; it just needs about ¼ cup of broth to have enough liquid to cook the noodles and not dry out.
