Vegetarian Sloppy Joes

One of my favorite meals, and a great one to deliver to friends or make-ahead, are The Sloppy Joe Stuffed Sweet Potatoes with Slaw. They use ground turkey, but are otherwise, quite close to what is below.

I wanted specifics down for a vegetarian version, and it still hits the spot, while being plant based! Having a zippy slaw and something creamy, like goat cheese or avocado, makes this the perfect meal.

To roast a sweet potato, preheat the oven to 400’. Prick it all over with the prongs of a fork. Wrap the potato in foil (many will say this isn’t necessary, but I can’t kick it) and roast for 45 minutes until tender. Timing can swing 10 minutes up or down depending on the size of your potato.
