The trail mix bars come together quickly and are a mix between a scotcheroo, a rice crispy treat, and the chewy bars with M& M’s from yesteryear.

To make these lunch-box friendly, sub out the PB for sunflower butter. For the trail mix, sub for a mix of ¾ cup pepitas, ¼ cup raisins, and ¼ cup chocolate.

If you can find brown rice syrup - use that! I used maple here it makes the bars more delicate and a bit crumbly. I keep them stored in the freezer so they stay together and last a little longer.

One tip! Chop the trail mix up a bit! This makes the bars easier to cut.
