I am loyal to the roasted tomato soup we’ve had here/the blog/cookbook, but that’s only really an option a few months out of the year when the tomatoes are good. I riffed on this super simple recipe I spotted in Rachel Ray magazine and we stretched the pot for two nights - once with grilled cheese and the following, we floated mini meatballs in it.
