Tofu & Green Bean Bowls w/ Coconut Lemongrass Rice

It doesssss have a few dirty pots and pans. I always try to consolidate steps, but you do need to make a bit of a mess on this one. I prefer to roast my tofu because I don’t have a wok and it just sticks to my other skillets. Stir fry it along with the green beans if you have the right vessel for that!

This is similar to other bowls in SKCC, but the lemongrass rice is so refreshing and I am always trying to add in more green beans as it’s a vegetable my kids will eat(-ish).

We have tried all the chili crisps and our favorite are the Trader Joe’s or Momofuku ones!
