The Sloppy Joe Sweet Potato from the very early days of SKCC is still a household favorite. I’ve started to cut back on steps since then, as I am sure the pandemic has done to most of us. These days I am leaning into a fridge stocked with sauces and bits that make meals better: a jar of pickled onions, a double batch of avo crema; good sharp cheeses and homemade vinaigrettes. This dish is a product of that.

You may not prefer the same cuisine for multiple days in a row. For me, it’s become one less thing to think about. Especially if it’s byproduct is this good.

Caramelized sweet potatoes stuffed with a heap of easy chicken tinga — we’ve done both here before. I’m not reinventing the wheel, but reminding you leftovers can be fun and don’t have to require so much headspace.
