Teriyaki Pork Meatballs w/ Pineapple & Coconut Rice

These meatballs need to be cooked all the way through, but pork is quite lean, so it can dry out if overcooked. They are first seared and then you have two options: cover them to finish cooking through, or finish them in the oven. In the summer, I try not to turn the oven on unless it’s absolutely necessary! Yes, this recipe would work fine with ground chicken and the cooking time would be identical. Want more veggies? Add some shredded cabbage or steamed broccoli.

*I don’t often make my own teriyaki these days, we really like the Bachan’s Japanese BBQ sauce that they sell at Costco, Thrive Market etc. If you want to make your own, try this recipe.
