Teriyaki Chicken w/ Rice & Sesame Blasted Broccoli

Serves 4

SKCC

A family favorite...ish. Cleo says rice is “too soft” (eye roll) but I’m more concerned with getting some broccoli in anyway. Coconut aminos are a soy-free, gluten-free replacement for soy sauce. It is also naturally sweeter. I think it’s easy to find these days, but soy sauce with a splash of honey will do the same thing. We found the sauce to be a great consistency as it was. If you prefer it thicker, you can stir in some cornstarch or arrowroot after the simmer to help thicken it. This will be enough to serve four, but the sauce will keep for a couple weeks if you want to double it.

I quick-pickled some radishes, the same way I do pickled onions, but with the liquid not quite as hot so they stay crisp, to go along here. See those instructions and sub in a bundle of shaved radishes for the onions in the sauce archive.
