Sweet Potato Peanut Stew

This is a recent favorite that I riffed from the Pinch of Yum blog. It is a mash up between an easy curry with coconut milk and West African peanut stew that has a broth that is enriched with smooth peanut butter.
The Pinch of Yum recipe was published as vegetarian, but you can take away one of the potatoes, and add 1 lb. of chicken breasts or thighs to add protein. See tips! A can of drained chickpeas would be excellent as well! It is written here as basic vegetarian, but add chickpeas or chicken to preference.
I liked this as a soup, and Hugh preferred it like a curry, served with rice. It’s great either way!
