Sweet Potato Croquettes w/ Garlic & Chive Aioli

For the mashed sweet potatoes, I strongly suggest 1) wrapping in foil and baking or 2) pressure cooking them. Boiling the potatoes in water will result in mashed potatoes that are slightly too watery for this application.
If you’re big on aioli, double the recipe below. If you have a small food processor, blend everything together in that for a luscious, smooth aioli.
