I love the addition of sweet potato here for a bit of tenderness and color. Written here is a jam filling, but a more classic butter, brown sugar and cinnamon combination is great as well.

If you are looking to freeze a portion, get to the step where you slice and arrange them in a greased pan, cover them with a layer of parchment or wax paper, then plastic wrap, and freeze at that point. When ready to bake, pull them out of the freezer to thaw and rise overnight, and bake them off in the morning. Don't freeze any longer than 3 months.
