Squash, Greens & Quinoa Fritters

A bit of work up front, and you have these beautiful fritters for dinner and lunch the next day. Quinoa doesn’t quite stick the way rice does, so we need the egg, oats, and feta here to help us make some “glue.”
This makes a decent amount! We served ours over greens or popped them in a small bun for the kids. Leftovers can be frozen!
