Squash & Apple Soup w/ Croutons

Love a weeknight soup! For the resistance I get from my kids with chunkier soups where they can really distinguish the vegetables and onions etc., a pureed soup with some croutons or a simple grilled cheese is an easy sell.
I do have an immersion blender (look at this cool cordless one!) which makes less dishes then transferring the cool soup in and out of a blender.
The soup is on the thinner side, because pureed soups remind me of baby food. If your personal preference is thicker, reduce is down to 5 cups of stock!
