Spinach Artichoke Melt

I used a large, sourdough boule here, so making two large sandwiches may be enough to feed four with a big green salad on the side. You know your eaters.

If you prep the artichoke and cheese filling in advance, you can make more or less than what is instructed here. The spread can sit in the fridge for a few days, so it would be great on another sandwich.
