The quickest of vegetarian dinners! We’re dressing up some tinned chickpeas with tomato and spices, and serving them with a cooked grain, chopped crunchy veggies, and yogurt and feta over the top (important addition!). We need those fatty toppings to make this tasty, so don’t skip!
If you are the sort to cook beans from scratch, cook them first, drain, then simmer in all the spices and seasonings.
