This is not paella, so we won’t pretend it is. We are using cauli rice here to get in some extra veg but feel free to toss in some pre-cooked rice instead if you desire. You don’t get the crispy bottom, but the Spanish flavors of paprika, lemon, and saffron are all still present.
We wrote in the optional shrimp addition. Not a fan of shrimp? You can skip them. To make this more hearty you could serve with some crispy bread and a big kale salad.
