I’ve given you lots of meat and cream lately, soooo maybe you’re ready for this healthy dinner as much as I am.

I don’t want to write recipes exclusively to folks who are close to a Trader Joes, but it’s nice to dump a bag of their cruciferous crunch into a bowl and end up with some varying textures and colors. I’m writing in the vegetables so they work for everyone, but the dressing will coat two bags of cruciferous crunch (pull out the tough ends of the brussels and kale!).

For my nut-free folks, you can replace the almonds with toasted pumpkin seeds in the salad. Replace the cashews in the dressing with half hemp seeds and half plain Greek yogurt should work.
