
Simple Potato & Onion Flatbread

In the fall and winter months, a version of this simple shaved potato flatbread always winds up on the menu of our local pizza spots. Originating in Rome, the potato pizza is composed of simple ingredients that make a magnificent final product. Plus, around the holiday season, you likely have most of these ingredients on hand.
I used store bought pizza dough as a shortcut and topped it with good olive oil ;), garlic, thinly sliced potatoes and deeply caramelized red onions, fontina, fresh thyme and chives.
The most laborious part of the recipe is the caramelized onions, which at this point most of you are pros at making. While the onions get jammy, soak your potatoes.
This flatbread is a showstopper!
