Sheetpan Za’atar Chicken

This dish comes together easily on a single sheet pan, with hardly any chopping. A midweek meal win! I buy the quick cooking farro from Trader Joe's. At other stores, it may be called “pearled” farro. If you use regular farro, you’ll just need to add 15 minutes to the cooking time for it to get tender. You can also use millet, which has a similar cooking time, and is a delicious ‘grain’ that is technically a seed. It tastes a bit like corn and couscous and is perfect for those who have an intolerance to rice.
The fresh toppings give this dish some texture, and you may want a little bump of creaminess by way of yogurt or cheese to finish.
