You all asked for more sheet pan meals, so we are delivering. There is a lot of chopping in the beginning, but once it is on the sheet pan it's a breeze. This meal is endlessly versatile. You can make it exactly as is, and serve over a bed of arugula. You can stuff it in pitas for the kids, or even make them mini meatball subs with a slater of feta sauce on toasted buns. You can add a grain to stretch it for a few extra days, or swap out the meatballs with veg sausages if you need it to be vegetarian.

Also, swap your veg out for any veg that is on season. Try to pick veggies that cook at similar times. For example, in the summer you could do this with zucchini, bell peppers, and shaved fingerlings. You can swap out cubes, squash for the potatoes, and do mostly winter veg.
