Savory Cottage Cheese Muffins

We left the house at 5:30am for a flight to Mexico for Spring break. I had been working on scraping bits from the fridge for meals the few days prior (a game only I like to play) and still had the ingredients to pull off these easy, protein packed muffins, so everyone had something handheld to eat at the airport.
Heidi Swanson makes hers with just herbs, but she has a few combinations listed in her post. I added sundried tomatoes, spinach and crumbled bacon; any add-ins you choose should work here.
