It’s sort of like a frittata, but bakes off much better, holding some structure to take these on the go or pop in a lunch box.

If you need them to be gluten or grain free, replace the flour with ½ cup coconut flour and 2 Tbsp. arrowroot.

Add Ins: Crumbled bacon, browned breakfast sausage, sun dried tomatoes, swap out the cheese.
