Salad w/ Crispy White Beans, Caramelized Pear & Endive

There are still a couple of months until the produce boom of spring, but here is a winter salad that makes me forget what I’m missing. I make the dressing in advance. Then cook the beans, followed by the pears in the same pan. Set aside, they cool down while I assemble the rest of the salad. I used kale, but I think this would be great with a butter lettuce or mixed green if you prefer things on the tender side.

Per usual, I could see chicken or salmon added here, but it doesn’t need them.
