Roasted Butternut Rigatoni w/ Parmesan Crumb

You can use nearly any short, dry pasta you have on hand. Rigatoni was used here, but ziti, farfalle, etc., would work just as well. A few questions on this type of tomato...sweet 100's are sweet, tiny, baby tomatoes. They are sometimes at larger markets and farmers markets. Any sort of baby tomato is fine, the sweet 100's or sun golds just have a really special flavor. Not a huge deal!

Note it does say "feeds 6" so if you don't want leftovers, reduce the amount of pasta and kale (I feel like you'll go through the squash sauce either way).

Your prepped squash should yield about 1 1/2 pounds of squash cubes or 5 ish cups. Truly doesn't need to be precise, snack on any extras.
