This Tuscan stew is the epitome of comfort. It uses up day-old (or older) bread and makes use of many pantry staples you probably already have in your cupboard. The bread and the mashy beans give the soup so much body and great texture. I will warn you, it's a good amount of chopping. Your food processor can definitely help with this!

Make this for a cozy night in and enjoy the leftovers for a few meals after. It lasts for a solid week in the fridge, making it an excellent meal to gift new parents, teachers or friends. It is on the thicker side, so reheat with a splash of water or broth.
