Red Pepper & Cauliflower Creamy Penne

You use the leftover ricotta mixture from the Swiss Chard Baguette Pizza to make this extra creamy!
The veggies are roasted in the oven, then half are blended with a bit of pasta water and the ricotta mixture, and the remaining vegetables are tossed in with the pasta. The whole thing is topped with crunchies, obviously.
You can use whatever short cut pasta you like here. If you eat meat, sautéed chicken sausage coins would be great.
