Red Curry Vegetable Noodles

We LOVE Thai noodle dishes, but rarely make them at home, because that is our favorite take-out. I added red curry paste, but if you stock a yellow or green curry paste, that would be fine. I know I know they aren’t the same but use what you have and add or tone it down based on your spice preference. Red seems to be most stocked at grocery stores I visit. This is not really spicy as is, add sriracha or chile paste to taste for some heat.

If you prefer to have some protein included, use chunks of chicken, shrimp or tofu in the stir-fry step.

Rice noodles drink up any sign of moisture, so reheat any leftovers with a splash of water.
