Rainbow Lunchbox Rollups

My kids would be absolutely fine if they had a PB+J every day for lunch. I do like to change it up, and, like to get a bit of fiber and protein in them. Do we love raw, shredded purple cabbage? Not necessarily, so if the rainbow theme is not of concern, use romaine instead or swap in your kids favorite vegetables.
For our GF friends, rice or corn flour tortillas won’t work here. Look for a cassava based tortilla, at your local health food store, Whole Foods, or Traders started carrying a rollable GF option too. I also find tortillas need a little toast over the stove, or in a seasoned cast iron pan.
