Quinoa & Pepita Granola Bars

Chalked full of oats, quinoa, seeds, and grains, these are a wholesome and hearty treat perfect for fall afternoons on the go!
The recipe is quite riffable! You can skip the quinoa if you don’t have it and instead add in ¼ cup more oats. Pecans and pepitas can be swapped for chopped almonds and walnuts. Don’t like cranberries? Add golden raisins. Your call!
These are crumbly and best kept in the fridge or freezer.
I call for honey here, but if you have brown rice syrup on hand, I suggest using that in place of honey as it has more holding power than other alternatives. Maple syrup would be too thin for this recipe.
