I only read a limited number of Substacks/newsletters, and Alison Roman’s is one of them. She just started feeding her child solids and mentioned a soup that worked for them and the babe. If you've been in that season, you know what a win it is. We don’t need mush food here anymore, but the idea of this soup sounded so great for getting back on track with weeknight meals now that school is back in session.
I took the bones of her soup and riffed the rest with leftovers. I added some dairy-free feta and a scoop of rotisserie chicken. It’s pretty mildly seasoned, so up the spices if you want its flavor more forward. I know you guys don’t like when I round down on timing, but this is nearly “under 30” given it’s largely hands off time!
