Taco Stuffed Sweet Potatoes

This isn’t going to blow your mind with creativity, but ya’ll ask for back pocket quick meals and this is one! We make taco meat like this once a week, usually on Hugh’s dinner night :) To divert from a tortilla, these use sweet potatoes, split and filled, then topped with the usual fillings, which can be personalized per person. I used ground chicken, but turkey, beef or a plant-based alternative would work great with no other changes.
I like to get the potatoes moving earlier in the day or night before, so that I can rewarm them while I make the taco meat and chop some cabbage and cilantro and everything is on the table in 20 minutes!
