Spinach Lasagna Roll-Ups

I will make this note again should folks be trying to keep the oven off in the summer heat. Your BBQ can be used as an oven. For this recipe specifically, the temperature isn’t imperative because we are just trying to get them warm throughout and set the egg. Without the top heat, like the oven gives, you won’t get a browning on the cheese, but they’ll still be warm and delicious.

Those of you needing a gluten free option, we tried these with the Banza lasagna noodles and while delicate, they do work! You can also use slabs of eggplant as a lower carb/gluten free option.
