Spiced Skillet Pancake w/ Apple Compote

Pancakes for a crowd is a challenge. It’s time consuming and if you have guests, your time is mostly spent flipping instead of enjoying their company. In December, many of you may have house guests for the holiday who need to be fed for three meals a day. Insert an easy skillet pancake. All of the buttery goodness of a pancake, none of the flipping or watching the stove.

We make an apple compote here to serve with the pancake, but maple syrup, fresh fruit, and salted butter will certainly do in a pinch. Note, this is NOT a cake texture, it’s like a pancake, so a bit more dense.

This is not a Dutch baby, but more of a clafoutis (tender in the center). This is meant to be served immediately, but my kids ate leftovers without complaining 😉
