This is the perfect Sunday dinner, and can be a doable weeknight meal if you salt the bird in advance.
We have a few spatchcock chickens on SKCC. You can find a visual here. If you have sharp kitchen shears, you’re good to go! Since the chicken is spatchcocked and cooked on a wire rack, it cooks quickly and most likely in under an hour (depending on how big your chicken is). You can make the mash while the chicken cooks, folding in the roasted garlic as the chicken rests before cutting.
