Smashed Potatoes w/ Green Sauce

We are a potato loving family and these go with just about everything. We have a few recipes here that include smashed potatoes, but I want to isolate these as a side dish to reference.
I like the baby Dutch potatoes from Trader Joe's or Whole Foods. They are smaller than a golf ball and the perfect size for smashing. Potatoes vary in starch content, and that matters here. We can get away with those multicolored bags, but definitely don’t want all red potatoes, they aren’t the right starch content to smash and crisp well.
I make any of our green herb sauce to paint on just out of the oven for more flavor and get a quick sprinkle of parm on there to melt on top while they are still warm. You can skip the cheese but potatoes love a sauce! Aji Verde, homemade Ranch or Muhummara are also great dippers for these.
