Sheet Pan Chorizo Meatballs

If you don’t want to make your own chorizo spice mix, you can either buy a pre-made mix. The Siete mix is great! Or, you can buy chorizo-seasoned ground pork. Just know the chorizo sausage is typically pretty spicy and a bit fattier than other ground meats. For the kids, I would mix one chorizo-seasoned link, with a plain ground protein to cut the spice.
