
Quick Spring Ramen Salad

A quick weekday lunch or dinner that can easily be bulked up with whatever protein you have on hand. The recipe uses ramen noodles, but a soba noodle or even spaghetti noodle would work!
The salad only needs half a batch of our Pantry Peanut Sauce, but make a full batch and make chicken or tofu skewers with rice and roasted broccoli another night.
