
Poblano & Black Bean Soup

Think tortilla soup but without the chicken (but can also handle the addition of chicken with a bit more broth!). I created heft here with charred peppers and aromatics, a few cans of beans and tomatoes and then added more freshness and texture with toppings. I like to cut the cabbage and radish on a mandoline so they’re super thin. My kids cannot eat a Mexican inspired soup without corn chips, so those are here too, crumbled or used as scoopers.
If you’d like it to be a little more luscious, you can stir in a dollop of cream cheese.
