Peanut Butter Blossom Cookies

I obviously did not make these cookies up, but I can’t track down their origination. I studied a few different recipes online, with all sorts of different ratios, and the one here is perfectly tender and rich and gets away with using natural peanut butter. Many recipes will insist that you need to use JIF or Skippy, but I used a smooth, natural peanut butter and they were excellent. The last few jars of peanut butter that I’ve purchased have been on the oily side, and for these cookies, that helped! If your PB is dry (doesn’t drip easily off of a spoon), add 1 Tbsp. of a neutral oil.
