If there’s something I will never venture to make myself, it’s puff pastry. For the fuss it takes to make it, the fact that you can purchase the sheets in the frozen section and get bakery-style treats in a fraction of the time. It’s a sensical short cut.
Here, we'll make a simple filling out of frozen peaches. Since the summer is waning, you can sub in for whatever fruit you have on hand or fresh peaches. Just taste the fruit to adjust sweetness, and note some fruits are more watery than others. If using fresh peaches, peel them, but otherwise the timing is pretty similar.
You will have a bit of leftover filling (great on oatmeal!). If you don’t want 8 turnovers or leftover compote, halve the recipe.
