New Mexican Posole

Sourcing a variety of chiles proved to be difficult, so we’re going with a New Mexican–style posole this week.
If you’re feeding kids or prefer a lower spice level, stick with just the New Mexico chiles. They’re mild and don’t contribute too much heat to the posole. If you can’t find ancho chiles but still want a little heat, you can add 1/2 teaspoon (or more) of cayenne pepper to the recipe.
Posole made without hominy isn’t technically posole, but if you’re not a fan of hominy, you could easily substitute your favorite bean. Chickpeas would be great here.
- You can use guajillo chiles, which are easier to find, just a bit spicier, so use 3 instead of 4!
