This cobbler can be made with whatever fruit you’ve got on hand. Just be sure to aim for ~2 pounds. Cherry rhubarb is a delicious alternative. As is apricot pistachio.
Using frozen berries (or any frozen fruit) will require adjusting the amount of starch. For 2 pounds of frozen berries, you’ll likely need to use 4-5 tablespoons of starch to ensure the juices thicken properly.
Corn starch and potato starch can be used interchangeably.
