My kids eat about two boxes of the Dr. Praeger’s veggie nuggets a week. They have a short list of ingredients, mostly potatoes and some other vegetables, and it feels like treat to them on nights where I know Hugh and I are eating something they may not like (spicy or soups for example). So, since they love them, I tried to make my own. Sure, they aren’t shaped like small dinosaurs, BUT! They liked them!

We had leftover mashed potatoes from another meal to use here, but the texture of a homemade mash can vary greatly. When you form the cakes, they should hold together. They’ll be tender straight out of the pan, and firm up a bit as they cool. If yours are falling apart, add more breadcrumbs or even some shredded cheese of choice to act as “glue.”

Most adults won't consider this a meal, so add a crisp green salad and a fried egg on top of the cakes to round it out.
