You’ll want to scale this based on what kind of eaters you have. This recipe makes 8 pepper halves and they are quite light. For my family, I’ll eat one pepper half and some salad, my boys will eat two halves each. Leftovers can be reheated and used for lunches or another dinner. I add olive tapenade for some richness, but if olives aren't your thing, a few dollops of pesto will add richness.
If you’re trying to pack in more protein, you can add in another ½ lb. of sausage and cut the rice down by ⅓ cup.
