This curry could be a soup or stew if you add more broth, but finished everything on one pan and it was the most delicious warm bowl. Yes, I did need to dirty a few sheet pans but the end result was worth it.

As eggplant goes, I really love Japanese eggplant as they don’t have as much bitterness, but generally speaking, just try to use the smaller, skinnier eggplant. I have a Breville toaster oven/air fryer and loved the texture of the vegetables I got in there! Cooking lentils takes around 20 minutes max, but the steamed packs you can find in the produce section would be great here as well!

Last tip! I left the sauce/broth pretty rich. You could cut it with some chicken bone broth or veggie broth to make it thinner and more soup-like or to stretch it further. If you want to add protein, this bowl could take some quick-roasted salmon or chicken and use a bit of broth as suggested below to extend the sauce further.
