Golden Cannellini Bean & Roasted Cabbage Stew

I’ve been working on some version of this recipe for awhile. Sometimes I’ll roast up a 4-pound cabbage and other times I’ll only use one can of beans. Really just depends on how I’m feeling but know that this recipe can be heavily tweaked depending on how you’re feeling, too.

Can’t find cannellini beans? Use great northern or garbanzo. Not a fan of soupy cabbage noodles? Chop the cabbage when it’s finished roasting (just make sure you let it cool).
